猪肉 500g
胡萝卜或红萝卜 1000g
面粉 1000g
水 适量
葱、姜、蒜
盐、十三香、味精、花椒粉、八角粉
花椒、油、老抽、醋
山西饺子的做法
在面盆中放入适量面粉,加入对应的冷水搅拌和匀。将和好的饺子面发酵至少半小时。
将肉搅碎,放入适量的十三香、盐、味精、切碎的生姜、老抽、葱、花椒粉、八角粉搅拌均匀。在锅中放入适量的油,放入数颗花椒,炒香后,将花椒油均匀地倒入肉馅中。将萝卜搅碎,放入肉馅,搅拌均匀。
将和好的面揉成条,再揪成圆团,制作饺子皮。
