羊骨腩冷水下锅,煮肉的时候最好是冷水下锅,这样在逐渐的加热中,肉中的血沫就会被一点一点的煮出来,要是热水下锅的话,肉的表面立即收缩,导致肉里面的血液出不来,就全部被包在里面了,煮出来的肉口感就不好。
