青豆放开水里焯三分钟捞出后放清水里浸泡备用。

虾仁剔除虾线洗净后放入盘中加适量盐、料酒、生粉、一点点胡椒粉、姜汁(新鲜生姜剁碎用纱布包住,取其汁)抓匀腌制20分钟。

炒虾仁速度一定要快,油不能太少。
时间太长,虾仁就容易变老,影响口感。
