1. Whichever of the fitness classes you opt for, trained instructors are there to help you.
此whichever引导的不是名词性从句，所以不能用类似于whoever = anybody who 和 whatever = anything that的变化来进行转换。
它引导的是让步状语从句，所以只能换成：
whichever = no matter which，其他就照抄了。

2. 如果引导的是名词性从句，才能按照楼主的那种变化形式。
Whichever of you comes first will receive a prize.
这个就是主语从句（属于名词性从句），所以不换成“no matter + wh-”。
个人认为可以这样转换：
Whichever of you comes first = Any (one) of you who come first
whichever既可指sb，又可指sth，所以不一定换成Anybody，而anyone/anybody后面又不能加of

3. 第一句不对，应该还是：Which of them comes from Canada?
Which of them is your headteacher? 此句无误。

1. 关键是句中的which的句意是“哪些”还是“哪个”。
这样说来，两种说法都是正确的。
Which of them come/comes from Canada?
他们中的哪些人/哪个人来自加拿大？

2. whichever既可指“某些人中的任何人”即指sb，也可指“某些事物中的任何事物”即指sth.
