(1)草鱼一条,收拾干净后,挂起来晾干水分备用;

(2)将晾干水分的草鱼切大块,放入腌制盆中;

(3)加入花椒、麻椒、生抽、老抽、食盐、白酒和姜汁;
(4)拌匀备用,盖上保鲜膜,放入冰箱腌制一天以上备用;

(5)为了防止粘锅,可以考虑沾一层干粉,也可以省略此步;
(6)炒锅放油,油八成热,下入鱼块炸制;

(7)小火炸制,慢慢炸到外皮金黄,捞出沥油,等所有的鱼块炸完,再重复炸一遍。这样炸出的鱼肉比较瓷实;
(8)干炸完成后沥油,就可以直接吃了,也可以上锅蒸一下。
