要用一半开水一半凉水和面,烙饼的火候和时间很重要,饼不能烙久,这样做出来的面皮软而嚼劲。下面是卤肉卷面皮的做法。
材料:面粉80克、冷水适量、开水40克、花生油5克
1、把面粉倒入盆中,加入开水,拌成柳絮状。

2、然后加适量冷水,揉成面团状,再加入花生油,揉成光滑的面团后醒面半个小时。

3、面团醒过后,把面团分成两份,分别压扁成面饼状,取其中一块并在上面刷上薄油,再将另一块贴到刷油的面饼上。

4、将贴在一起的二块面饼擀薄,擀成大概二毫米左右的薄度。

5、将平底锅放在火上,并在锅底刷上薄薄一层油,放下面饼,先用小火烙熟一面,再翻面烙熟另一面。
