第一句：Most of the parents who choose home schooling are unhappy with the quality or depth of education offered in the schools.里面的offered为什么用offer的ed形式？其中省略了什么吗？
第二句：One social factor influencing their decision is that...........其中的influencing为什么用ing形式？是不是也省略了什么？

这里的offered是来表示被动的一个用法，相当于一个从句 which is offered，可以理解为省略了which is.
这个跟offered的用法可以一样理解，只不过因为factor影响decision是一个主动式，所以用了动词的ing形式，这里的influencing也可以相当于一个定语从句which influences~
